In 2015, I read about the village of Mangshui in a Chinese book about old tea trees — and that same year I visited it for the first time. This cake consists of sorted spring yellow leaves from old gushu trees — the so-called huangpian — which the villagers traditionally drink themselves. The leaves are processed by gently roasting in a wok, followed by rolling and sun-drying.
It is a robust tea with a dense character. The taste can be bitter and sweet, with a lingering aftertaste of tropical fruits. Pressed into a 100g cake, it rewards patient steeping.
